Apple Streusel Coffee Cake

Ingredients

1-1/4 cup all-purpose flour
2-1/4 tsp baking powder
1/2 cup brown sugar
1/2 tsp salt
1/2 tsp ground cinnamon
1 large egg
1/2 cup whole milk
4 Tbsp unsalted butter, melted
1 apple, unpeeled and chopped (1-1/2 cups)

Ingredients for the streusel topping

1/2 cup brown sugar
1/4 cup all-purpose flour
3 Tbsp cold unsalted butter, cut up
1 tsp ground cinnamon

Directions

Preheat oven to 400 degrees. Butter an 8×8″ baking dish.

To make the cake, combine the flour with the baking powder, sugar, salt and cinnamon in a medium bowl.

In a separate bowl, beat the egg and then mix in the milk and melted butter.

Pour the wet ingredients into the dry ingredients.

Add the apples, and mix well.

Pour into baking dish.

Sprinkle streusel mixture over the top of the batter. Bake the cake for 30 minutes, until it is golden and dry on top.

Cake will keep for 4 days covered at room temperature. But chances are good that it will be eaten before the 4 days are up.  ;-)

    1. Hi Patricia! Yeah, it’s weird . . . I totally wasn’t planning on blogging this, but I found myself snapping photos of the baking process for funsies and when I finished, I thought “Why not?”
