(Adapted from Chef Gale Gand’s recipe for Pear Streusel Coffee Cake)
Ingredients
1-1/4 cup all-purpose flour
2-1/4 tsp baking powder
1/2 cup brown sugar
1/2 tsp salt
1/2 tsp ground cinnamon
1 large egg
1/2 cup whole milk
4 Tbsp unsalted butter, melted
1 apple, unpeeled and chopped (1-1/2 cups)
Ingredients for the streusel topping
1/2 cup brown sugar
1/4 cup all-purpose flour
3 Tbsp cold unsalted butter, cut up
1 tsp ground cinnamon
Directions
Preheat oven to 400 degrees. Butter an 8×8″ baking dish.
To make the cake, combine the flour with the baking powder, sugar, salt and cinnamon in a medium bowl.In a separate bowl, beat the egg and then mix in the milk and melted butter.Pour the wet ingredients into the dry ingredients.Add the apples, and mix well.Pour into baking dish.To make the streusel, mix the sugar, flour, cold butter and cinnamon in a bowl until combined.Sprinkle streusel mixture over the top of the batter. Bake the cake for 30 minutes, until it is golden and dry on top.Cool in the pan and cut into squares. Best served with coffee and good company.Cake will keep for 4 days covered at room temperature. But chances are good that it will be eaten before that time is up. 😉
Oh this looks delicious Gina! I miss eating sweets – but I had to pretty much give up all sugar and dairy since diabetes and high cholesterol runs rampant in my family But – Let me live vicariously through a lovely (and skinny!) you! 😀 Enjoy!
